Easy BakingšŸ˜„

Hi everyone, I hope you are all okayšŸ’– During this quarantine period a lot of people are very bored and find themselves with nothing to do in order to keep themselves occupied. I have been posting on my Instagram and Snapchat accounts that I have been baking a lot recently and surprisingly, a lot of people messaged me and told me that they did not know how to bake and found it hard but would love to be able to. Today's post is for everyone, including the people who find it hard to bake. Me and my sister Ceara were baking over the weekend and we used the Betty Crocker Velvety Vanilla cake mix. By using this cake mix you do not have to weigh out any ingredients or use many different items such as flour, sugar, butter etc its all in one box. Betty Crocker box mixes can be bought in Tesco and there are a wide variety of boxes to choose from such as red velvet cake mix, lemon cake mix, chocolate brownie mix etcšŸ˜„


In the video I have uploaded I have included pictures of the ingredients you will need and also the equipment that you will need in order to make this. Me and Ceara decided that instead of making a Victoria Sponge cake, we were going to make Victoria Sponge cupcakes instead.


The measurements for the ingredients not in the box are:

• 6 tbsp of vegetable oil

• 180ml of water

• 3 medium eggs

• Jam and fresh cream for the filling.


The steps to make the mixture are as follows:

1) Mix the eggs, oil, water and cake mix together and whisk for 2-3 minutes until smooth and creamy using an electric whisk or a hand whisk if you prefer.

2) Pour the cake mixture evenly into your two greased cake tins for a Victoria Sponge cake or if you are making cupcakes like me and Ceara decided to do, pour the mixture into cupcake cases.

3) If you are making a Victoria Sponge cake, put the two tins into the oven for 22-27 minutes at 180°C. If you are making cupcakes with the mixture, put the cupcakes in for 23 minutes at 180°C in order for them to be brown on the top and nice and fluffy on the inside. In order to check whether either the cake or the cupcakes are ready, poke a knife into the middle of the cake or cupcakes and once it comes out clean it is done.

4) Leave the cake or cupcakes to cool. Whisk the fresh cream in a bowl and once what you have made is cool, add the jam and cream. Me and Ceara cut the cupcakes in half and put jam on one side and cream on the other.


I would 110% recommend this Betty Crocker box mix to anyone. When the cupcakes were in the oven the kitchen smelt so goodšŸ˜ The cupcakes tasted sooo nice, they were the best cupcakes we have had!

These mixes are perfect for anyone who would not be a confident baker but is looking for something fun to do to pass the time, for anyone who is baking with children or for people who can bake but want to make something nice to eat quickly.


I will be posting more baking recipes that you can make from scratch for different things in the coming weeks as I am enjoying baking a lot lately.
